Although it belongs to the espresso family, it offers a completely unique taste experience: more concentrated, full‑bodied, and less bitter. WHAT EXACTLY IS A RISTRETTO SHOT?

A ristretto shot is made from finely ground coffee and a significantly smaller amount of water than an espresso. This creates an especially intense, aromatic drink with a fuller flavor and a strong but less bitter note. The concentrated extraction highlights the sweet and complex aromas of the coffee bean.

HOW IS A RISTRETTO PREPARED?

When preparing a ristretto, water is pushed through finely ground coffee under high pressure — just like with an espresso. However, the extraction is stopped earlier, resulting in about 15 ml instead of the usual 30 ml of espresso. Although the amount of coffee used is the same, the shorter extraction time leads to a denser, sweeter, and less bitter flavor.Baristas often use two methods for this:

  • stopping the shot earlier, or
  • using a finer grind so that less water is extracted in the same amount of time.
Both methods achieve the typical concentration of a ristretto.

IS A RISTRETTO STRONGER THAN AN ESPRESSO?

A ristretto tastes more intense and fuller than an espresso because aromas and oils are more concentrated. Although it tastes stronger, a ristretto actually contains less caffeine because the shorter extraction dissolves less caffeine.In short:
